Good evening blog friends. This stomach bug is something. Just as I thought I was over it. BAMM!! It is back. Then yesterday hubs came down with it. But get this: One day! One single day! I am sick over a week and he gets it one single day. So since both of us weren’t feeling well and the weather here has decided to turn to winter finally I was thinking maybe a big pot of soup was in the making for dinner. So I made my tortilla soup. It was so yummy. I didn’t make it quite as spicy as I usually do but it was good enough. I had one cup and hubs ate 2. I had 1 cup left so I put it away to eat for dinner tonight. Princess and I took the day and went shopping. I actually found a Christmas clearance deal. One of those massaging seat cushions. WOW your not going to believe me but I only paid 2.25 for it. Oh I know it was a steal but someone marked it wrong and they had to give it to me for that price. ha ha Only to get home and have it stolen from my chair when I got up. Now it is sitting in hubs chair and there is no getting it back.
Oh and the thief not only stole my cushion but my cup of soup as well.
Here is my recipe for those that want to try the easiest Tortilla Soup around.
2 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, chopped
1 cup chopped celery…
1 cup chopped carrots
1 jalapeno pepper, seeded and chopped
1 (32oz) container of chicken broth
2 cups coarsely chopped cooked chicken breast (I just pan fry to big breast in the cold skillet with seasoning)
1 (14.5 oz) can rotel (your choice Hot, Mild, Wimpy lol)
1/2 cup salsa
1 tablespoon lim juice
1/2 teaspoon salt 1/2 teaspoon pepper

heat oil in dutch oven add onion and garlic cook 5 minutes or until soft. Add carrots, celery and jalapeno cook 5 minutes or until tender. Add broth, rotel, salsa, lime juice salt and pepper. Bring to a boil. Cover reduce heat and simmer 3 hours. Top with tortilla chips, avacados, cilantro or cheese or whatever you would like. Enjoy
